Close out a bar tab system at night

The problem

Open tabs and walkouts leave money on the table.

Steps

1. Require a card on file for every tab
2. Do a last call tab review 30 minutes before close
3. Close all tabs before staff check out
4. Log walkouts with a manager note
5. Review walkouts weekly for patterns
